Butter is melted over a medium heat to separate it from milk solids (and or other impurities) and then it is strained to get the pure ghee or clarified butter. Ghee is used in Indian cooking a lot. I tend to use ghee in every recipe possible, ghee is my most favorite fat and I use a lot of it my cooking. Ghee imparts a very good flavor to the dish, you can use it for a simple stir-fry, rice dishes, meat dishes, for making flat breads, etc Ghee is also perfect for people who have dairy intolerences as the butter is cooked or clarified and the milk solids are removed from it.Ghee also does not need to be refrigerated as it has no dairy or dairy product in it. Idea here is to help the butter melt fast. Place a skillet over a sow flame. Let it become gently hot. Add butter cubes in to the skillet. Let it melt slowly. Once melted, increase the flame to medium. Cook until you see bubbles or froth foaming on top. Switch of the flame and let milk solids settle down. Now slowly strain the melted butter through a fine strainer or a cheese cloth to get ghee. Transfer the ghee or clarified butter to storage container or mason jar. Use as you need it.
