My father Takeichi Hirata's Cooking Notebook, has just celebrated its fiftieth anniversary since its publication on June 1, 1971.
Today, as a commemorative video, I reproduced the Chǎojiàngmiàn dish.
At that time they used Italian pasta and Japanese miso, probably because they could not get the authentic Chinese noodles to reproduce this Chinese food in Japan.
It is a combined recipe for Japanese, Western and Chinese food.
For the meat miso, we use miso made in La Paz, a Japanese colony in Paraguay, South America.
It was very delicious and in harmony with the spaghetti.
Please try it.
