As for stats, I feel like the order is this:
Off road: You need off road to access some of the best hiding spots and the seeker needs to be able to chase people through the off road.
Acceleration: Important if you're found to get to full speed quickly
Handling: Needed to make a quick maneuver if needed
Speed: Allows you to escape on straightaway
Drift: Needed for maneuverability; however, not as fast as handling
Mini Turbo: Boosts speed stat
Weight: Pretty much useless
Quacker is the best I suppose. Magikruiser and Dolphin Dasher are also good. ... 14

@TrabPuKcip3 years ago I rate your hiding spot as a 9.5/10, just because you got caught at the end. My reccomendation is that rarely (like 2 or 3 in every game), a user can get a star themselves and can evade the chasers easier (mainly on tracks like Luigi Raceway and Yoshi Falls). ... 4
